One of my favorite winter camping recipes is for Beefy Noodle Stew! This hearty meal is comforting, delicious, and incredibly easy to make. The only downside is that there are never any leftovers! Take a look at the recipe below and give it a try whether you’re at home or on the road!
Beefy Noodle Stew
Ingredients:
- 3 lb beef chuck roast
- 1 26-oz Cream of Mushroom soup
- 2 32-oz beef broth, divided
- 1 packet Beefy Onion soup mix
- 2 tsp minced garlic
- 1 package Amish egg noodles
You’ll also need these kitchen tools:
- Slow cooker
- Can opener
- Large bowl
- Whisk
- Slow cooker liner
Directions:
- Put the liner in the slow cooker – this easy first step is a total game changer and makes clean up a breeze! Add in the entire chuck roast in one big piece.
- Next, whisk together the cream of mushroom soup, 2 cups of the beef broth, the packet of dry soup mix, and the minced garlic in a large bowl. Whisk until smooth and well combined, then pour it over the roast in the slow cooker.
- Put the lid on the slow cooker and set the temperature to high heat. Let the stew cook for 4 hours undisturbed (don’t go taking the lid off to stir or smell it!).
- At the 4 hour mark, remove the lid, and use a couple forks to shred up the meat.
- Once you’ve shredded the meat, add remaining 2 cups of broth and entire package of egg noodles.
- Reduce heat to low. Cook for another hour or until noodles are tender.
- Enjoy!
One of my favorite things about this winter camping recipe is that even the picky eaters in my family like it. It’s absolutely delicious, but also very simple and doesn’t challenge the picky palate too much. And of course, it’s perfect for a cold day!
